Main Ingredients
  • 1/4 cup chia seeds
  • 1 cup almond milk (or any plant-based milk) You can use oat, coconut, or cashew milk for different flavors.
  • 1/2 cup raspberries (fresh or frozen)
  • 2 tablespoons maple syrup (or sweetener of choice) Feel free to use honey or agave instead.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method

Preparation
  1. In a bowl, combine chia seeds, almond milk, maple syrup, vanilla extract, and salt. Stir well to avoid clumps.
  2. Add the raspberries and mix gently.
  3. Cover and refrigerate for at least 2 hours or overnight until the chia seeds expand and the mixture thickens.
  4. Stir well before serving.
  5. Enjoy chilled as a breakfast, snack, or dessert!

Notes

Store chia pudding in the fridge for up to five days in an airtight container. It tastes better after sitting for a day. Stir well to prevent clumping.
