  • 4 cups water
  • 2 pounds corned beef Choose high-quality corned beef without additives.
  • 1 large onion, quartered
  • 2 cloves garlic, minced Feel free to add more garlic if you love it.
  • 1 tablespoon black peppercorns Important for flavor; do not skip.
  • 1 head cabbage, cut into wedges
  • 4 large carrots, cut into chunks Baby carrots can be used as a shortcut.
  • 5 pieces potatoes, cut into quarters More potatoes can be added if desired.

Cooking
  1. In a large pot, combine the water, corned beef, onion, garlic, and peppercorns. Bring it to a boil over medium heat.
  2. Cover the pot and simmer for about 150 minutes or until the beef is tender.
  3. Once your beef is tender, add the cabbage, carrots, and potatoes to the pot. Cover and cook for an additional 30-40 minutes, or until the vegetables are tender.
  4. Remove the meat and vegetables from the pot and let the beef rest for a few minutes before slicing.

Notes

Pair with crusty bread and enjoy with a dark beer or Irish stout for the perfect meal. Be patient while cooking; the low and slow method yields the best flavor.
