Ingredients
  

Spices
  • 1.5 teaspoons smoked paprika adds a nice little kick
  • 1 teaspoon garlic powder my favorite spice
  • 1 teaspoon onion powder pro tip: this goes in everything
  • 1 teaspoon dried oregano or mixed herbs whatever you have on hand works
  • 0.5 teaspoon salt use sea salt or whatever’s in your cupboard
  • 0.25 teaspoon black pepper or a bit more, if you want to spice things up
Main Ingredients
  • 2-3 medium potatoes can use sweet potatoes for variety
  • 2 tablespoons olive oil divided
  • 500 grams lean beef mince or substitute with lentils for a vegetarian option
  • Lettuce shredded for serving
  • Cheese any kind dairy-free or regular
Sauce Ingredients
  • 4 tablespoons mayonnaise or Greek yogurt for a healthier option
  • 1 tablespoon ketchup personal preference
  • 1 teaspoon mustard Dijon or yellow
  • 1 teaspoon pickle juice from the jar of pickles

Method
 

Preparation
  1. Mix the spice blend: Combine smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper in a small bowl.
  2. Prep your potatoes: Wash and cut the potatoes into chips, then pat them dry with paper towels.
  3. Toss the chips in a large mixing bowl with 1 tablespoon of olive oil and half of the spice mix.
Cooking
  1. Arrange the potato chips on a baking tray and bake in a preheated oven at 200°C (390°F) for 30-40 minutes until golden and crispy.
  2. While the potatoes are baking, heat the remaining olive oil in a frying pan over high heat. Add the beef mince, breaking it apart as it cooks, and sprinkle in the remaining spice mix.
  3. In a small bowl, mix together the mayo, ketchup, mustard, and pickle juice to create the burger sauce.
Assembly
  1. Once the potatoes are crispy, divide them among bowls. Top with shredded lettuce, cooked beef, cheese, and pickle slices.
  2. Drizzle the burger sauce over the top before serving.

Notes

Use a non-stick pan for the beef. Sweet potatoes also work well! Feel free to experiment with toppings like bacon bits or guacamole. Serve with crispy onion rings for added crunch!
