Ingredients
  

For the vinaigrette
  • 1/2 cup Extra-Virgin Olive Oil Makes a big difference in flavor.
  • 1/4 cup Fresh Lemon Juice White wine vinegar or rice vinegar can be substituted.
  • 1 small Shallot (minced) Alternatively, you can use a tiny garlic clove.
  • 2 tablespoons Fresh Dill Fresh is preferred over dried.
  • 1 tablespoon Dijon Mustard Whole-grain is also a good option.
  • 1 tablespoon Honey Maple syrup is a great vegan alternative.
  • 1/2 teaspoon Kosher Salt Add more if you prefer a saltier flavor.
  • 1/4 teaspoon Black Pepper Adjust according to taste.

Method
 

Preparation
  1. Start by pouring the extra-virgin olive oil into a medium bowl.
  2. Add the fresh lemon juice, rolling the lemons on the counter beforehand to help with juicing.
  3. Add the minced shallot or garlic.
  4. Chop the fresh dill finely and toss it in.
  5. Mix in the Dijon mustard and honey using a whisk or fork.
  6. Season the mixture with kosher salt and black pepper, tasting as you go.
  7. Whisk the ingredients together while slowly drizzling in the olive oil to achieve a creamy texture.
  8. Taste and adjust seasoning as needed.

Notes

For an added kick, try incorporating capers or a dash of red pepper flakes. A mason jar is great for shaking and mixing the vinaigrette.
