  • 4 cups Watermelon, cubed Get a seedless one if possible.
  • 1 large Cucumber, peeled and diced Zucchini can be used as an alternative.
  • 1 small Red Onion, finely chopped Chopping may induce tears.
  • 1 cup Feta Cheese, crumbled Adds a salty touch.
  • 1/4 cup Fresh Mint, chopped Do not substitute with dried mint.
Dressing
  • 2 tablespoons Olive Oil, extra virgin
  • 1 tablespoon Balsamic Vinegar
  • to taste Salt Sea salt preferred.
  • to taste Pepper

Method
 

Preparation
  1. Cube watermelon and dice cucumber, keeping pieces about an inch for easy scooping.
  2. Finely chop red onion and mint, avoiding large chunks of onion.
Combine Ingredients
  1. In a large bowl, combine watermelon, cucumber, onion, feta cheese, and mint. Toss gently to mix.
Make Dressing
  1. In a small bowl, mix olive oil and balsamic vinegar with some salt and pepper. Pour over the salad and toss lightly.
Final Touch
  1. Let the salad sit in the fridge for at least 30 minutes to allow flavors to meld.
Serving
  1. Scoop into bowls and serve, perfect for a summer picnic!

Notes

Using a sharp chef's knife for chopping can save time. Consider adding diced avocado for creaminess. This salad pairs well with grilled chicken or fish.
