  • 2 cups diced cucumber English cucumbers recommended
  • 1/4 cup lime juice Fresh squeezed is preferable
  • 2 tablespoons olive oil Extra virgin is recommended
  • Salt and pepper to taste Sea salt if desired
  • 1/2 cup crumbed feta cheese For added flavor
Garnish
  • 1 handful fresh herbs (like mint or basil) Can mix herbs

Method
 

Preparation
  1. In a large bowl, combine the cubed watermelon and diced cucumber.
  2. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the watermelon and cucumber; gently toss to combine.
  4. Garnish with fresh herbs and crumbed feta cheese before serving.

Notes

Experiment with different herbs; leftover dressing is great on fish or chicken. Always taste and adjust seasoning as needed.
