  • 1 English cucumber chopped English cucumbers are preferred for their fewer seeds.
  • 6 oz feta cheese, cubed Use high-quality feta for the best flavor.
  • 1 handful fresh mint leaves, chopped Fresh mint is essential.
  • 1 fresh lime zest and juice Adds a crucial citrus zing.
  • to taste sea salt flakes and fresh ground black pepper Adjust according to preference.

Method
 

Preparation
  1. Cube the watermelon by slicing it into wedges, removing the rind and chopping it into bite-sized pieces.
  2. Chop the cucumber into rounds or half-moons.
  3. In a large serving bowl, add the cubed watermelon and chopped cucumber.
  4. Add the feta cheese and chopped mint leaves.
  5. Zest and juice the lime, then add it to the salad.
  6. Season with sea salt and freshly ground black pepper, then taste and adjust lime juice if needed.
  7. Serve immediately or in mason jars for a cute presentation.

Notes

Leftovers are tastier the next day. Optional add-ins include diced red onion for additional flavor.
