Preparation
- Cube the watermelon by slicing it into wedges, removing the rind and chopping it into bite-sized pieces.
- Chop the cucumber into rounds or half-moons.
- In a large serving bowl, add the cubed watermelon and chopped cucumber.
- Add the feta cheese and chopped mint leaves.
- Zest and juice the lime, then add it to the salad.
- Season with sea salt and freshly ground black pepper, then taste and adjust lime juice if needed.
- Serve immediately or in mason jars for a cute presentation.
Notes
Leftovers are tastier the next day. Optional add-ins include diced red onion for additional flavor.
