  • 3 cloves garlic, minced Pre-minced can be used for convenience.
  • 4 cups vegetable broth Homemade or store-bought.
  • 1 medium lemon, juiced Adds brightness.
  • 1 teaspoon turmeric For color and flavor.
  • to taste salt and pepper Use sea salt for a fancy touch.
  • to taste fresh parsley for garnish Optional for presentation.

Preparation
  1. Rinse the lentils under cold water to avoid gritty soup.
  2. In a large pot, heat a little oil over medium heat.
  3. Add the chopped onion, carrots, and celery, then sauté until softened, about 5-7 minutes.
  4. Add the garlic and cook for another minute.
Cooking
  1. Stir in the lentils, vegetable broth, turmeric, salt, and pepper.
  2. Bring to a boil, then reduce heat and let it simmer for about 25-30 minutes, until lentils are tender.
  3. Stir in the lemon juice and adjust seasoning if needed.
  4. Serve hot, garnished with fresh parsley.
