- In a bowl, whisk the eggs with salt and pepper until well beaten.
- Heat olive oil in a non-stick skillet over medium heat.
Cooking
- Add chopped onion and bell pepper to the skillet and sauté until softened.
- Add the tuna to the skillet and stir to combine, breaking up any clumps.
- Pour the whisked eggs over the tuna mixture and cook until the edges start to set.
- Gently lift the edges with a spatula, allowing uncooked eggs to flow underneath.
- Once the eggs are mostly set, fold the omelette in half and cook for another minute.
- Serve warm, garnished with cheese or herbs if desired.
Notes
Use a non-stick skillet for best results. Feel free to add spices or a splash of hot sauce before serving for an extra kick.
