Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a standard 9×5 inch loaf pan.
- In a large bowl, combine the mashed bananas, applesauce, melted butter or oil, eggs, and vanilla extract. Mix until just combined.
- In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated.
- Fold in optional nuts.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve warm, optionally with butter or almond butter. Drizzle with honey for added sweetness if desired. Ensure bananas are very ripe for best results.
