  • 3 medium very ripe bananas, mashed The riper, the better.
  • 1/2 cup unsweetened applesauce If unavailable, substitute with an extra banana.
  • 1/3 cup melted unsalted butter or coconut oil Coconut oil adds richness.
  • 2 large eggs Essential for moisture.
  • 1 teaspoon vanilla extract Enhances flavor.
Dry Ingredients
  • 1 3/4 cups whole wheat flour (or all-purpose flour) Whole wheat adds a heartier flavor.
  • 1 teaspoon baking soda For rising.
  • 1/2 teaspoon ground cinnamon Adds a nice aroma.
  • 1/4 teaspoon salt Regular salt works.
Optional Ingredients
  • 1/2 cup chopped walnuts or pecans Provides crunch, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a standard 9×5 inch loaf pan.
  3. In a large bowl, combine the mashed bananas, applesauce, melted butter or oil, eggs, and vanilla extract. Mix until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated.
  6. Fold in optional nuts.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm, optionally with butter or almond butter. Drizzle with honey for added sweetness if desired. Ensure bananas are very ripe for best results.
