Ingredients
  

Fruit Filling
  • 2 cups chopped strawberries Fresh is best, but frozen works in a pinch.
  • 2 cups chopped rhubarb Ask at local farmer's market if hard to find.
  • 1 cup sugar Regular granulated unless feeling adventurous.
  • 1 tablespoon cornstarch Helps thicken the fruit mixture.
  • 1 teaspoon vanilla extract Use high-quality vanilla for best flavor.
  • 1 teaspoon lemon juice Fresh is preferred; bottled is acceptable.
Crumb Mixture
  • 2.5 cups all-purpose flour King Arthur is a good brand.
  • 1 cup rolled oats Old-fashioned oats recommended.
  • 1 teaspoon baking powder Provides extra lift.
  • 0.5 teaspoon salt Sea salt if fancy; regular salt is fine.
  • 1 cup butter, softened Do not melt; softened butter yields a better crumb.
  • 1 cup brown sugar Light brown sugar works best.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice. Set aside.
  3. In another bowl, mix flour, oats, baking powder, salt, butter, and brown sugar until crumbly.
Assembly
  1. Press half of the crumb mixture into a prepared baking dish.
  2. Spread the fruit mixture over the crust.
  3. Top with the remaining crumb mixture.
Baking
  1. Bake for 45-50 minutes, or until the top is golden brown.
  2. Allow to cool before cutting into bars.

Notes

Use fresh ingredients when possible. Parchment paper can help with easy removal from the baking dish. Consider adding nuts or coconut for added crunch.
