Preparation
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice. Set aside.
- In another bowl, mix flour, oats, baking powder, salt, butter, and brown sugar until crumbly.
Assembly
- Press half of the crumb mixture into a prepared baking dish.
- Spread the fruit mixture over the crust.
- Top with the remaining crumb mixture.
Baking
- Bake for 45-50 minutes, or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
Use fresh ingredients when possible. Parchment paper can help with easy removal from the baking dish. Consider adding nuts or coconut for added crunch.
