Filling

  • 1 tablespoon cornstarch For thickening.
  • 1 teaspoon vanilla extract Use high-quality vanilla for best flavor.
Topping
  • 1 cup rolled oats Thicker oats are recommended.
  • 1 cup all-purpose flour Standard flour for baking.
  • 1/2 cup brown sugar Light brown sugar is preferred, but dark is acceptable.
  • 1/2 teaspoon cinnamon Adds flavor.
  • 1/2 cup butter, melted Use unsalted butter.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine chopped rhubarb and halved strawberries, then add sugar, cornstarch, and vanilla extract. Mix well.
  3. Pour the fruit mixture into a baking dish.
  4. In another bowl, mix rolled oats, flour, brown sugar, and cinnamon. Then pour in the melted butter and mix until crumbly.
  5. Sprinkle the oat mixture generously over the fruit.
Baking
  1. Bake for 35-40 minutes, or until the topping is golden and the fruit is bubbly.
  2. Let it cool slightly before serving.
  3. Serve warm with a scoop of vanilla ice cream.
