Ingredients
  

For the Pie Crust
  • 2.5 cups all-purpose flour Use what's on sale.
  • 2 teaspoons sugar A tiny touch of sweetness.
  • 0.25 teaspoon salt Sea salt for a fancier option.
  • 0.5 cups cold unsalted butter Cut into small pieces.
  • 0.5 cups cold shortening Crisco is recommended.
  • 4-6 tablespoons ice water Add to bring the dough together.
For the Strawberry Filling
  • 6 cups fresh strawberries Rinsed and sliced.
  • 0.33 cups cornstarch For thickening.
  • 0.33 cups white sugar Can substitute with brown sugar.
  • 1 teaspoon ground cinnamon A pinch enhances flavor.
  • 2 tablespoons fresh lemon juice Brightens the strawberries.
  • 0.25 teaspoon salt For balancing flavors.
  • 1 large egg For the egg wash.
  • to taste coarse sugar For sprinkling on top.

Method
 

Make the Pie Crust
  1. Preheat your oven to 425°F.
  2. In a large bowl, mix flour, sugar, and salt. Add cold butter and shortening.
  3. Once mixed into pea-sized crumbs, slowly drizzle in ice water.
  4. Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
Prepare the Strawberry Filling
  1. Wash and slice the strawberries.
  2. In a large bowl, combine strawberries, cornstarch, sugars, cinnamon, lemon juice, and salt.
  3. Toss everything together gently and set aside.
Assemble and Bake the Pie
  1. Roll out the dough on a floured surface until 1/8 inch thick.
  2. Place the dough in the pie plate and pour the strawberry filling into the crust.
  3. Top with a lattice crust or simple pie crust with vents.
  4. Brush with egg wash and sprinkle coarse sugar on top.
  5. Bake for about 40-45 minutes or until golden brown, watching carefully for doneness.

Notes

Use cold utensils for easier dough handling. Serve warm with vanilla ice cream for added deliciousness.
