Ingredients
  

Salad Ingredients
  • 2 cups chopped strawberries Fresh is best, but frozen works too.
  • 2 cups chopped cucumbers Persian or mini cucumbers recommended.
  • 1/2 cup crumbled feta cheese Adds a nice zing.
  • 5-10 leaves fresh basil, chopped Adjust depending on size.
  • 5-10 leaves fresh mint, chopped Optional but recommended for freshness.
Dressing Ingredients
  • 2 Tbsp olive oil Use good-quality oil.
  • 1/2 unit lemon juice Fresh squeezed is essential.
  • 1/2 tsp honey Can substitute with maple syrup.
  • 1/2 tsp white wine vinegar Apple cider vinegar works too.
  • 1/4 tsp garlic powder Convenient for flavor.
  • Salt and pepper, to taste Seasoning to your preference.

Method
 

Preparation
  1. In a small bowl or jar, whisk together olive oil, lemon juice, honey, vinegar, garlic powder, and a good sprinkle of salt and pepper.
  2. In a large serving bowl, combine strawberries, cucumbers, feta, basil, and mint. Cut cucumbers in half and then slice for crunch.
Combining and Serving
  1. Pour the dressing over the salad and gently toss to combine. Adjust seasonings as needed.
  2. Serve immediately. For leftovers, enjoy straight from the fridge.

Notes

Consider adding sunflower seeds or nuts for extra crunch. Presentation matters, so add candied pecans for a WOW factor!
