  • 1 cup evaporated coconut milk Can use almond milk or regular coconut milk.
  • 1.5 cups fresh strawberries Use ripe strawberries for best flavor.
  • 1-2 tbsp maple syrup Can substitute with honey.
  • 1 tsp vanilla extract Use pure vanilla for better flavor.
  • 1 pinch salt Use sea salt for a gourmet touch.
  • 0.25 cup chia seeds These are the key ingredient for thickening.

Method
 

Preparation
  1. In a blender, combine the coconut milk, strawberries, maple syrup, vanilla, and salt. Blend until smooth.
  2. Taste the mixture and adjust the sweetness as preferred.
Mix with Chia
  1. Pour the strawberry milk into a large bowl and add the chia seeds. Whisk together until fully combined.
  2. Let it sit for a minute and then whisk again to avoid clumping.
Chill
  1. Cover the bowl and refrigerate for at least 4 hours or overnight.
Final Whisk
  1. After chilling, whip the pudding with a fork. If it’s too thick, add a splash of coconut milk.
Serve
  1. Serve the chia pudding with toppings of your choice, such as fresh fruit, yogurt, or granola.
