Ingredients
  

Noodle Base
  • 8 oz Potato noodles Find these in the Asian aisle or order online.
Flavoring
  • 2 tblsp Chili oil Spicy and fragrant.
  • 3 cloves Garlic Minced for better flavor.
  • 2 tblsp Soy sauce Regular or low sodium, based on preference.
  • 1 tblsp Vinegar Rice vinegar preferred, but apple cider works too.
  • 1 tsp Salt Use sea salt or regular.
  • 1 tsp Pepper Freshly ground if possible.
Garnish
  • 1/4 cup Cilantro Chopped for garnish.

Method
 

Cooking Noodles
  1. Cook the potato noodles according to package instructions. Bring a pot of water to a rapid boil first, then drop in the noodles.
Preparing the Sauce
  1. While the noodles are cooking, heat up chili oil in a pan until it sizzles.
  2. Add minced garlic and sauté until fragrant without burning it.
  3. Toss in soy sauce and vinegar, mixing well.
Combining
  1. Drain the noodles when ready and carefully add them to the garlic-sauce mix, coating them well.
  2. Season with salt and pepper to taste, and add a dash of sugar if desired.
Garnishing
  1. Just before serving, garnish with chopped cilantro.

Notes

Use a good nonstick pan to avoid burnt sauces. Add chili flakes or sriracha for extra spice. Serve with crispy veggies for a complete meal.
