Method
 

Cooking
  1. In a medium saucepan, combine the chopped rhubarb and honey.
  2. Cook over medium heat until the rhubarb is soft, about 10-15 minutes.
  3. Add vanilla extract, ground cinnamon, and salt if using.
  4. Use an immersion blender to puree the mixture until smooth.
  5. Continue to cook on low heat for another 5-10 minutes to thicken.
  6. Remove from heat and let cool before transferring to a jar.
  7. Store in the refrigerator and enjoy on toast or as a spread.

Notes

For variations, consider adding fresh herbs like mint or basil. Serve on pancakes, yogurt, or stir into oatmeal for an elevated experience.
