  • 1 large egg Room temperature for best results.
  • 1 teaspoon vanilla extract Use pure vanilla for better flavor.
  • 1 teaspoon baking soda This is the key leavening agent.
  • 1 pinch salt Sea salt for a gourmet touch.
  • 1 1/2 cups all-purpose flour Whole wheat can be substituted for health.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth, then stir in the melted butter.
  3. Add the sugar, egg, and vanilla to the banana mixture and mix well.
  4. Sprinkle baking soda and salt over the mixture and mix it in evenly.
  5. Gently stir in the flour until just combined; do not overmix.
  6. Fold in the chopped rhubarb gently.
  7. Pour the batter into the prepared loaf pan and shake it slightly to settle.
Baking
  1. Bake for 50-60 minutes, checking with a toothpick to see if it comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack.
