  • 1/2 tbsp sesame oil Or extra virgin olive oil if preferred.
  • 1 tbsp rice wine vinegar
  • 1 tbsp soy sauce Low sodium is recommended.
  • 1 tbsp honey Can substitute with agave for vegans.
  • 1/2 lime juiced Lemon can be used as a substitute.
  • sesame seeds Any kind will work; even fancy ones.
  • green onion, chopped Adds nice crunch.

Method
 

Preparation
  1. Wash and peel the carrots thoroughly to remove dirt.
  2. Create carrot ribbons by peeling the carrots into long strips.
  3. Toss the carrot ribbons into a large bowl.
Mixing the Salad
  1. Add sesame oil, soy sauce, rice wine vinegar, honey, and lime juice to the bowl.
  2. Mix the ingredients thoroughly using your hands or a wooden spoon.
Finishing Touches
  1. Sprinkle sesame seeds and chopped green onions on top before serving.
  2. Refrigerate for 30 minutes to meld flavors if desired, or serve immediately.

Notes

A good peeler is essential for making ribbons effectively. Taste as you go and adjust ingredients to your liking. Pairs well with grilled chicken or as a picnic side dish.
