Pizza Eggs

A delicious and unique breakfast combining the flavors of pizza with scrambled eggs, ideal for a lazy brunch.

Ingredients
  

Main Ingredients
  • 3 eggs 3 eggs (the fresher, the better!)
  • 60 g 60g (about 2 oz) reduced-fat cheese, grated Use reduced-fat cheese for better crisping.
  • 1 tbsp 1 tbsp passata (about 15g) Less is more to avoid watery texture.
  • few slices g A few slices of salami (approx. 20g) Can substitute with turkey pepperoni for lower calories.
  • Mixed herbs, to top (basil is my fave)

Method
 

Preparation
  1. Melt half of the grated cheese in a non-stick frying pan over medium heat for 3-4 minutes until melted and slightly crispy.
  2. In a bowl, crack the 3 eggs and whisk until smooth.
Cooking
  1. Pour the whisked eggs over the melted cheese, cover with a lid, and cook until the bottom is firm and golden.
  2. Carefully flip the whole egg-cheese base using a spatula.
  3. Spread the passata over the cooked side, add the salami slices, and sprinkle the remaining cheese on top. Cover again until the cheese melts and everything is heated through (1-2 minutes).
  4. Remove from the pan, sprinkle with mixed herbs, and serve immediately.

Notes

Avoid using too much passata to prevent a watery consistency. Pair with fruit for a simple side.
