  • 4 cups sliced peaches (fresh or frozen)
  • 1 cup raspberries (fresh preferred) Frozen will work if thawed
Sugars and Liquids
  • 1 cup sugar White sugar
  • 1 tablespoon lemon juice Freshly squeezed, if possible
  • 1 teaspoon vanilla extract Enhances flavor
  • 1 cup milk Whole or non-dairy options work
Dry Ingredients
  • 2 cups all-purpose flour Sift if possible
  • 1 tablespoon baking powder Make sure it's fresh
  • 1/2 teaspoon salt Sea salt is fancier, but regular works too
  • 1 teaspoon cinnamon Optional
Fat
  • 1/2 cup unsalted butter, melted Coconut oil can be used as a substitute
For Serving
  • vanilla ice cream To serve with the cobbler

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced peaches, raspberries, sugar, lemon juice, and vanilla extract. Let it marinate for about 15 minutes.
  3. In another bowl, mix together the flour, baking powder, salt, and cinnamon until blended.
  4. In a separate large bowl, combine the melted butter and milk. Stir until just combined, leaving it a bit lumpy.
Assembly
  1. Pour the fruit mixture into a greased baking dish. Spoon the batter over the top, leaving some fruit exposed for a rustic look.
Baking
  1. Bake for 45-50 minutes until the batter is golden and cooked through.
  2. Serve warm with a scoop of vanilla ice cream and drizzle some juice from the fruit on top.

Notes

Take your time for perfect results. If the batter looks lumpy, it's fine! For added crunch, top with toasted nuts or a sprinkle of powdered sugar.
