For the Peach Filling
  • 6 cups fresh peaches, peeled, pitted, and sliced (about 8-10 medium peaches)
  • 1/2 cup granulated sugar (for the peaches)
  • 1/4 cup light brown sugar, packed (yes, packed, or it gets a bit messy)
  • 1 teaspoon ground cinnamon (for warm flavor)
  • 1/4 teaspoon ground nutmeg (optional, adds depth)
  • 1 tablespoon fresh lemon juice (to balance sweetness)
  • 2 tablespoons cornstarch
For the Biscuit Topping
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (for the topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (sea salt is fancy, regular works too)
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse sugar (for sprinkling on top)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss together peach slices, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  3. Pour the peach mixture into the prepared baking dish, spreading it out evenly.
Biscuit Topping Action
  1. In a medium bowl, whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together milk and vanilla extract, then pour into the dry mixture and stir it until just combined.
The Sweet Finale
  1. Drop spoonfuls of the biscuit dough over the peach mixture in the baking dish.
  2. Sprinkle coarse sugar over the biscuit topping.
  3. Bake for about 35-45 minutes, or until the peach filling is bubbling and the topping is golden brown.
  4. Let cool for at least 15-20 minutes before serving.

Notes

Pairs beautifully with vanilla ice cream, but can also be enjoyed plain. Store leftovers covered at room temperature.
