Ingredients
  

Peach Filling
  • 3 cans 15oz canned peaches in juice Don’t skimp on the juice here, it adds flavor!
  • 50 g brown sugar Dark brown sugar gives a deeper flavor.
  • 1/2 tbsp lemon juice Fresh if you’re feelin' fancy.
  • 1 tsp vanilla paste Vanilla extract works if you can’t find paste.
  • 1/2 tsp cinnamon Cinnamon is life, FYI.
  • 1 tbsp cornstarch Helps thicken your peach goodness.
  • 1/4 tsp salt Sea salt if you’re fancy.
Cobbler Topping
  • 188 g all-purpose flour
  • 100 g granulated sugar Add more for extra sweetness.
  • 2 tsp baking powder The little fluffy magic.
  • 1/2 tsp salt
  • 113 g unsalted butter, cold Don’t let it get too soft!
  • 120 g cold milk Whole milk is best.
  • 1 1/2 tbsp granulated sugar For sprinkling on top.
  • 1/2 tsp cinnamon Like I said, cinnamon is life.

Method
 

Preparation
  1. Drain the canned peaches in a colander for at least 10 minutes.
  2. In a 10-inch baking dish, toss the drained peaches with brown sugar, lemon juice, vanilla paste, cinnamon, cornstarch, and salt.
  3. Preheat your oven to 350°F (180°C).
  4. In a bowl, whisk together flour, sugar, baking powder, and salt.
  5. Cut the cold, cubed butter into the flour mixture until it looks like crumbs.
  6. Pour in the cold milk and mix until it forms a thick, sticky dough.
  7. Roughly flatten pieces of dough in hand and place over the peaches.
  8. Brush the biscuit tops with milk, then sprinkle with the cinnamon-sugar mix.
Baking
  1. Bake for 45 minutes until golden brown and bubbly.
  2. Let it cool for 10 minutes before serving.

Notes

Keep an eye on it while baking in case your oven misbehaves. Serve with ice cream for extra indulgence.
