  • 8 oz pasta (any kind; penne preferred) Cook according to package directions.
  • 2 cloves garlic (minced) Essential for flavor.
  • 1/4 cup extra-virgin olive oil Use high-quality oil for best results.
  • 1 tbsp balsamic vinegar Adds a nice zing.
  • 1/2 cup fresh basil leaves (cut chiffonade or roughly chopped) Fresh basil enhances the dish's aroma.
  • 2 cups chopped tomatoes (mix of cherry and on the vine) Using a variety makes the dish colorful.
  • 1/2 cup shredded parmesan cheese Freshly grated is preferred.

Method
 

Cooking Pasta
  1. Bring a heavily salted pot of water to a boil.
  2. Add the pasta and cook according to package directions until al dente.
  3. In a large bowl, combine minced garlic, olive oil, balsamic vinegar, fresh basil, chopped tomatoes, and parmesan cheese.
  4. Mix until well combined, then season with kosher salt and black pepper.
  5. When the pasta is done, transfer it to the bowl with the bruschetta mixture. Optionally, reserve 1/4 cup of pasta water before draining.
  6. Mix everything in the bowl and let it sit for about 5 minutes to let the flavors meld.
  7. Taste and adjust seasoning if necessary.
  8. Serve immediately, garnished with extra basil, parmesan, and a dash of black pepper.

Notes

For best flavor, use fresh ingredients and high-quality olive oil. This dish works well warm or at room temperature.
