Ingredients

Main ingredients
  • 2.2 pounds skinless salmon fillets Fresh salmon is ideal, but frozen works too—just thaw it properly.
  • 1 teaspoon coarse salt Sea salt is recommended.
  • cup unsalted butter Use unsalted butter for the best flavor.
  • 2 whole navel oranges Freshly squeezed juice is preferred.
  • 1 teaspoon lemon zest Adds a vibrant citrus flavor.
  • to taste lemon slices For garnish.
  • to taste chopped parsley For presentation.

Method

Preparation
  1. Sprinkle the coarse salt on all sides of the salmon fillets to enhance the flavor.
  2. Melt the unsalted butter in a large pan over medium heat for about 3 minutes until browned.
Cooking
  1. Add the salmon to the pan with the skin side up, frying for about 3-4 minutes to form a golden crust.
  2. Pour in the orange juice and sprinkle in the lemon zest. Turn the salmon pieces over gently and cook for an additional 4-5 minutes, basting with the sauce.
  3. Once cooked through, transfer the salmon to a plate and top with lemon slices and chopped parsley.

Notes

A good spatula is essential for flipping the salmon without breaking it. Serving suggestions include quinoa or steamed veggies for a complete meal. Pairing with white wine is recommended.
