  • 1 cup Cheese (mozzarella and parmesan mix) Use any cheese of your choice.
  • 3 cups Fresh spinach Adds color and nutrition.
  • 4 cloves Garlic More garlic enhances flavor.
  • 1 large Sweet onion Chop finely.
  • 1 cup Heavy cream Whole milk can substitute, but less creamy.
  • 4 cups Vegetable broth Chicken broth is a suitable alternative.
  • 2 tablespoons Olive oil Use good quality olive oil if possible.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Freshly cracked is best.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in the spinach and cook for a few minutes until wilted.
  4. Add the tortellini, vegetable broth, and heavy cream, ensuring enough liquid.
  5. Bring to a simmer and cook until the tortellini is al dente, about 5-7 minutes.
  6. Stir in cheese and season with salt and pepper until melted.
  7. Serve warm and enjoy immediately.

Notes

This recipe can feed a crowd and can be customized with leftover veggies. Optional: Add crushed red pepper flakes for added spice.
