Base Ingredients
  • 2 cups whole milk Preferably organic
  • 1.5 cups water or broth Use broth for more flavor
  • 8 oz pasta of your choice Whole wheat, chickpea, or gluten-free options work well
  • 8-10 oz broccoli, finely chopped Fresh is best for flavor
  • 2 cups shredded extra sharp cheddar cheese For maximum flavor
  • 1/4 cup plain Greek-style yogurt Adds creaminess
  • 1 tbsp butter or ghee Optional for richer flavor

Method
 

Preparation
  1. Bring the whole milk and broth (or water) to a boil in a large pot.
  2. Once boiling, toss in your pasta. Reduce the heat to a simmer and let it cook for about 10 minutes, stirring occasionally.
  3. Stir in the finely chopped broccoli and cook for another 2-3 minutes until the broccoli is bright green.
  4. Remove the pot from heat and stir in the cheddar cheese, Greek yogurt, and butter or ghee until melted.
  5. Serve hot and enjoy your meal!

Notes

Feel free to add a splash more milk or broth if the texture is too thick. Consider adding breadcrumbs on top for extra crunch.
