  • 2 large eggs Large eggs.
  • 3 pieces very ripe bananas The uglier, the better!
  • 1/4 cup vegetable oil Can substitute with avocado oil.
  • 1/3 cup maple syrup Make sure it’s the real stuff.
  • 1 tsp vanilla extract Highly recommended.
Dry Ingredients
  • 1 tsp baking powder Check for freshness.
  • 1/2 tsp baking soda Important for rising.
  • 1/4 tsp salt Sea salt preferred.
  • 1.5 cups oat flour Can be made from ground rolled oats.
  • 1/2 cup rolled oats Also great for breakfast.
Final Touches
  • 1/2 cup chocolate chips Plus more for topping.

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Line a loaf pan with parchment paper or grease it with oil.
  3. Mash the ripe bananas in a bowl until smooth.
  4. Whisk in the eggs, oil, maple syrup, and vanilla extract until well combined.
Mixing
  1. In a separate bowl, combine oat flour, rolled oats, baking soda, baking powder, and salt.
  2. Fold the dry ingredients into the wet ingredients until just mixed.
  3. Fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Top with additional chocolate chips, oats, and a sprinkle of sugar.
  3. Bake for about 45 minutes, checking around the 40-minute mark for doneness.
  4. Allow the loaf to cool completely before slicing.

Notes

For best results, use a good non-stick pan. Serve with peanut butter or butter for extra decadence. Consider adding nuts or a hint of cinnamon for variations.
