  • 2 cups oat flour Can be homemade or store-bought.
  • 1 tsp baking powder Ensures the bread is light and fluffy.
  • 0.5 cups granulated sugar (white, brown, or coconut) Brown sugar adds nice moisture.
  • 0.5 cups chocolate chips Optional but highly recommended.

Preparation
  1. Preheat your oven to 350°F and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, melted coconut oil, eggs, and vanilla extract. Stir until well mixed.
  3. Add oat flour, baking powder, and sugar. Mix until combined, but do not overmix; lumps are okay.
  4. Fold in the chocolate chips.
  5. Pour the batter into the lined bread pan.
Baking
  1. Bake for 35 to 38 minutes, checking for doneness.
  2. Remove from the oven and let the bread cool before slicing.

Notes

Serve warm with butter. If bananas are extra mushy, it helps with the bread's moisture. Slicing and freezing individual pieces is great for busy mornings.
