Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in ice water, a tablespoon at a time, until the dough comes together.
- Roll the dough into a circle on a floured surface, aiming for about 12 inches.
- Transfer the dough to a baking sheet lined with parchment paper.
Filling
- In a separate bowl, toss the sliced nectarines with sugar, cinnamon, and vanilla extract.
Assembly
- Arrange the nectarines on the dough, leaving a border. Fold the edges of the dough over the nectarines.
- Brush the edges with beaten egg.
Baking
- Bake for 30-35 minutes until the crust is golden brown. Start checking at the 25-minute mark.
Serving
- Allow to cool slightly before serving.
Notes
