Preparation
- In a blender or food processor, blend the diced nectarines, Greek yogurt, honey or maple syrup, and vanilla extract until smooth for about 1-2 minutes.
Churning
- Pour the blended mixture into an ice cream machine and churn according to the machine's instructions, typically 20-25 minutes.
Freezing
- Transfer the mixture to a lidded container and freeze for at least 2 hours.
Serving
- Scoop the frozen yogurt and serve immediately. Add toppings like nuts, dark chocolate shavings, or a drizzle of extra honey as desired.
Notes
Divide the mixture into smaller batches if your blender isn't strong. If you don't have an ice cream machine, pour the mixture into a shallow dish and stir every 30 minutes while freezing. Let sit for a minute after taking it out of the freezer for easier scooping.
