  • 2 pieces ripe nectarines, pitted and diced Make sure these are super juicy.
  • 2 cups Greek yogurt Full-fat for a richer taste, low-fat works too.
  • 1/4 cup honey or maple syrup Adjust this to your sweetness preference.
  • 1 teaspoon vanilla extract Use pure vanilla extract.

Method
 

Preparation
  1. In a blender or food processor, blend the diced nectarines, Greek yogurt, honey or maple syrup, and vanilla extract until smooth for about 1-2 minutes.
Churning
  1. Pour the blended mixture into an ice cream machine and churn according to the machine's instructions, typically 20-25 minutes.
Freezing
  1. Transfer the mixture to a lidded container and freeze for at least 2 hours.
Serving
  1. Scoop the frozen yogurt and serve immediately. Add toppings like nuts, dark chocolate shavings, or a drizzle of extra honey as desired.

Notes

Divide the mixture into smaller batches if your blender isn't strong. If you don't have an ice cream machine, pour the mixture into a shallow dish and stir every 30 minutes while freezing. Let sit for a minute after taking it out of the freezer for easier scooping.
