Ingredients
  

Meat ingredients
  • 1 lb lean ground beef 85% lean preferred
  • 1 lb Italian sausage Use mild for kids
Vegetables
  • 1 cup chopped bell peppers Mix of red, yellow, and green
  • 1 cup sliced mushrooms Adds great flavor
Sauce and cheese
  • 1 cup low-carb pizza sauce Rao's is recommended
  • 2 cups shredded mozzarella cheese More cheese is better
  • 1 cup shredded provolone or cheddar cheese Mix and match based on what's available
Seasonings and oil
  • 2 tbsp olive oil Use fresh olive oil
  • 2 tsp Italian seasoning Enhances the Italian flavor
  • 1 tsp garlic powder To taste
  • 1/2 tsp red pepper flakes Optional for extra kick

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add the olive oil, ground beef, and Italian sausage. Cook until browned, breaking up clumps.
  3. Add the chopped bell peppers and sliced mushrooms. Stir in Italian seasoning, garlic powder, and red pepper flakes until fragrant.
  4. Pour in the low-carb pizza sauce and simmer for about five minutes.
Assembly
  1. Layer half of the meat mixture in the greased baking dish.
  2. Sprinkle with half of the mozzarella and provolone/cheddar cheese.
  3. Add the remaining meat mixture on top and finish with the remaining cheese.
Baking
  1. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  2. Let it cool for a few minutes before serving to avoid burns from molten cheese.

Notes

Pressing the veggies helps reduce moisture. Store leftovers in individual containers for quick lunches. Serve with a side salad for balance.
