  • 500 g ground pork Fresh ground pork for best taste.
  • 100 ml red wine Adds depth of flavor.
  • 10 g orange zest Provides a hint of citrus.
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil For cooking the sausages.

Method
 

Preparation
  1. In a large bowl, combine ground pork, garlic, oregano, paprika, salt, and pepper. Mix until well incorporated.
  2. Add the orange zest and mix well to distribute the flavors.
  3. Pour in the red wine and knead the mixture until fully combined, it should feel sticky.
  4. Shape the mixture into sausage forms or small patties.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Once hot, place the sausages in the pan and cook slowly until golden-brown, turning occasionally, which should take about 12–15 minutes.
  3. Ensure they are fully cooked inside.
Serving
  1. Serve hot with lemon wedges, crusty bread, or roasted potatoes.

Notes

If desired, you can substitute the pork with chicken or a meat alternative. Storing: Cool leftovers, place in an airtight container, and refrigerate for up to three days, or freeze for longer storage.
