  • 1 lb ground beef or turkey Replace with plant-based option if desired.
  • 1 cup corn
  • 1 cup black beans, rinsed and drained Can substitute with kidney beans.
  • 1 1 bell pepper, diced
  • 1 1 avocado, diced
  • 1 cup shredded cheese Consider different cheese varieties for variation.
  • 1 tsp taco seasoning Use store-bought or homemade.
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional) for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Roast for about 25-30 minutes or until crispy and golden.
  4. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  5. Add taco seasoning and cook according to package instructions.
Assembly
  1. In a large bowl, combine roasted potatoes, cooked meat, corn, black beans, and bell pepper. Mix well.
  2. Serve in bowls and top with diced avocado, shredded cheese, and cilantro if desired.

Notes

Don’t rush cooking; let potatoes roast until golden and crispy. Consider adding herbs for extra flavor. Store leftovers in airtight containers; potatoes should be stored separately to prevent sogginess.
