  • 1/4 cup lime juice Fresh squeezed is best, or use bottled.
  • 1/4 cup olive oil Extra virgin, if you want to be fancy.
  • 2 cloves garlic, minced Watch that it doesn’t burn.
  • 1 tablespoon chili powder Adds a kick.
  • 1 teaspoon cumin Adds depth of flavor.
  • 1/2 teaspoon salt Use sea salt for a fancier touch.
  • 1/4 teaspoon black pepper Freshly cracked is recommended.
  • 1 piece avocado, diced Adds a nice color and flavor.
  • 1/4 cup fresh cilantro, chopped Optional, but highly recommended.

Preparation
  1. In a bowl, mix lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes for maximum flavor.
Cooking
  1. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
  2. Once cooked, remove from the grill and let it rest for a few minutes.
  3. Top with diced avocado and fresh cilantro before serving.
