  • 2 cloves garlic, minced Garlic makes everything better.
  • 4 cups beef broth Homemade is great, but store-bought is fine.
  • 1 cup heavy cream Makes the soup luscious.
  • 1 cup shredded cheddar cheese Sharp cheddar for an extra kick.
  • 1 teaspoon Worcestershire sauce Adds more flavor.
  • 1 teaspoon mustard Regular yellow mustard works.
  • 1 cup diced tomatoes Fresh or canned both work.
  • 1 cup diced pickles Optional but highly recommended.
  • 1 teaspoon salt Sea salt for a gourmet touch.
  • 1/2 teaspoon black pepper Season to taste.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion and garlic, cooking until softened.
Cooking
  1. Stir in the beef broth, Worcestershire sauce, and mustard.
  2. Bring to a simmer and add the diced tomatoes and pickles.
  3. Reduce heat and stir in the heavy cream and cheese until melted.
  4. Season with salt and pepper to taste.
  5. Serve hot and enjoy with extra pickles or bacon bits if desired.

Notes

A good pot is essential to prevent spills. Use an immersion blender for a smoother texture if preferred. Pairs well with low-carb bread.
