- In a large pot, cook the Italian sausage over medium heat until browned, about 5-7 minutes.
- Add diced vegetables (carrots, celery, onion) and cook until softened, another 5-7 minutes.
- Stir in the white beans and diced potato and cook for 3-4 minutes.
- Pour in the chicken or vegetable broth and bring it to a boil. Let it simmer until the potato is tender, approximately 20 minutes.
- If using, stir in the heavy cream and let it simmer for another 5 minutes.
- Season with salt, pepper, and Italian herbs to taste.
- Serve hot, optionally garnished with fresh parsley.
Notes
Don't worry about chopping veggies evenly; it all cooks down. Pair with crusty bread for a complete meal.
