  • 12 ounces cheese tortellini Fresh kind recommended.
  • 1 cup salami, diced Genoa salami preferred.
  • 1 cup ham, diced Honey or smoked ham.
  • 1 cup provolone cheese, diced Any cheese can be used.
  • 1 cup cherry tomatoes, halved Choose ripe, juicy ones.
  • 1/2 cup red onion, finely chopped Will make you cry!
  • 1/2 cup black olives, sliced Kalamata or regular.
  • 1/2 cup pepperoncini, sliced Adds a touch of zing.
  • 1/2 cup Italian dressing Homemade or store-bought.
  • Salt and pepper to taste Use sea salt for flavor.
  • Fresh parsley for garnish Optional, for presentation.

Method
 

Cooking the Tortellini
  1. Cook the tortellini according to the package instructions. Drain and let cool.
Mixing the Salad
  1. In a large bowl, combine the cooled tortellini, salami, ham, provolone cheese, cherry tomatoes, red onion, black olives, and pepperoncini.
  2. Pour the Italian dressing over the salad and toss to combine.
  3. Season with salt and pepper to taste.
Garnishing
  1. Garnish with fresh parsley before serving.

Notes

Using fresh ingredients is key for the best flavor. Consider adding crunchy croutons or freshly grated Parmesan on top for extra delight.
