  • 3 tablespoons potato starch Cornstarch can be used as an alternative.
  • 1 tablespoon baking powder Key for achieving crispy skin.
  • 1 teaspoon garlic powder Essential for flavor.
  • 1 teaspoon onion powder Avoid fresh onions to prevent tears.
  • ¼ teaspoon paprika Adds color and flavor.
  • oil spray Oil spray Use olive or canola oil.
Sauce Ingredients
  • ½ cup honey Avoid corn syrup; use real honey.
  • 1 lemon lemon, zested Choose a juicy lemon.
  • ¼ cup lemon juice Fresh lemon juice is preferred.
  • 1 tablespoon minced garlic More garlic for extra flavor.
  • 1 tablespoon butter
  • 1-2 teaspoons ground pepper Adjust to desired heat level.
  • 1 pinch salt Sea salt is recommended.

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Pat dry the chicken wings to ensure crispy skin.
Coating
  1. In a large bowl, mix potato starch, baking powder, garlic powder, onion powder, and paprika.
  2. Toss the wings in the mixture until evenly coated.
Baking
  1. Lightly spray a parchment-lined sheet pan with oil.
  2. Arrange the wings in a single layer and spray the tops with a little more oil.
  3. Lower the oven temperature to 425°F (220°C) and bake for 35 to 40 minutes, flipping halfway.
Making the Sauce
  1. In a small saucepan, combine honey, lemon juice, lemon zest, minced garlic, butter, salt, and pepper.
  2. Heat over medium and stir for 3 to 5 minutes until combined.
Tossing and Serving
  1. Once wings are done, place them in a bowl and drizzle with the honey lemon pepper sauce.
  2. Toss to coat the wings well.

Notes

For added presentation, toss in minced parsley and serve with celery and a side of ranch or blue cheese dressing for dipping.
