  • 1 cup warm water Temperature should be 110°F/43°C

  • 1 tsp salt Sea salt for fancy, regular salt for normal
  • 2 tbsp unsalted butter Melted
  • 1/4 cup baking soda Important for boiling
  • 1 large egg Beaten, for egg wash
  • to taste coarse salt For sprinkling on top

Method

Preparation
  1. Dissolve the yeast and sugar in warm water and let it sit for about 5 minutes until bubbles form.
  2. Add flour, salt, and melted butter to the bowl and mix. Knead for 5 to 7 minutes until smooth and elastic.
  3. Cover the dough and let it rise for 20 minutes.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Once the dough has risen, divide it into 8 pieces and roll each into a rope. Wrap around each hot dog and pinch the ends.
Cooking
  1. Boil 6 cups of water with baking soda. Carefully dip each pretzel dog into the boiling water for about 30 seconds.
  2. Transfer to the prepared baking sheet, brush each with the beaten egg, and sprinkle with coarse salt.
  3. Bake for 15-18 minutes until golden brown.

Notes

Use a stand mixer to make mixing easier, don’t rush the dough's rising time, and serve with mustard or cheese sauce for dipping.
