Preparation
- Preheat your oven to 375°F (190°C).
- Grease a medium casserole dish with nonstick spray.
- In a large bowl, combine Greek yogurt, cream cheese, minced garlic, salt, and pepper. Mix until smooth.
- Fold in shredded chicken, baby spinach, chopped artichoke hearts, and half of the mozzarella cheese.
- Transfer the mixture to the prepared casserole dish.
- Sprinkle with remaining mozzarella cheese and Parmesan cheese on top.
Baking
- Bake for 30-35 minutes, or until the casserole is hot and bubbly and the cheese is golden brown.
- Let cool for 5 minutes before serving.
