Preparation
- Preheat your oven to 400°F (200°C).
- Blend the cottage cheese, eggs, oat flour, garlic powder, baking powder, salt, and olive oil until smooth.
- Spread the mixture into a 1/4-inch thick rectangle on a lined baking sheet.
- Bake for 18–22 minutes until golden and set.
- Broil for 1–2 minutes for extra crispiness, keeping an eye on it.
- Let it rest for 5–7 minutes after you take it out.
Cooking the chicken
- Pat the chicken dry and rub with the spice mix of paprika, cumin, chili powder, black pepper, and salt.
- Cook the chicken in a skillet over medium-high heat for 5–6 minutes per side until the internal temperature reaches 165°F (74°C).
- Let your chicken rest for 5 minutes, then slice it thinly.
Assembly
- Mix together the Greek yogurt, lemon juice, and a pinch of salt.
- Slice the flatbread into rectangles.
- Layer the yogurt sauce, chicken, lettuce, tomatoes, onion, and herbs on the flatbread.
- Fold tightly into wraps.
- Sear wraps in a dry skillet for 1–2 minutes per side for extra crispness if desired.

Ensure the flatbread is the right thickness for the best texture. Feel free to add different veggies or avocado for added creaminess.
