  • 1/4 cup milk Use any kind (almond, cow, oat).
  • 1/2 teaspoon salt Sea salt recommended.
  • 1/4 teaspoon black pepper Adds a kick.
Additional Ingredients
  • 1 tablespoon olive oil Use any oil you have.
  • 1/2 cup cooked sausage, crumbled Spicy sausage recommended for added flavor.
  • 1/2 cup cooked bacon, crumbled Bacon fanatic approved.
  • 1/2 cup shredded cheddar cheese Extra cheese is always a good idea.
  • 4 large flour tortillas Ensure they’re big enough for filling.

Method
 

Preparation
  1. Whisk eggs, milk, salt, and pepper until smooth.
  2. Heat olive oil in a skillet over medium heat.
  3. Pour in egg mixture and stir gently until soft curds form, about 3-4 minutes.
  4. Add crumbled sausage and bacon to the eggs, stir until well combined.
  5. Sprinkle in cheddar cheese and stir until melted.
  6. Warm the tortillas until flexible, then spoon filling into each and roll tightly.
  7. Serve warm and enjoy.

Notes

Use a sturdy spatula to handle the soft eggs. Add cayenne pepper or jalapeños for extra spice. Consider toppings like salsa, avocado, or hot sauce. Veggies can be substituted for meat.
