Cake Ingredients
  • 2 cups all-purpose flour Cake flour makes it fluffier.
  • 1.5 cups sugar Less isn’t an option here.
  • 0.5 cups unsalted butter (softened) Needs to be room temperature.
  • 1 cup whole milk Oat milk works too.
  • 3.5 tsp baking powder Be precise here.
  • 1 tsp vanilla extract Use high-quality vanilla if possible.
  • 0.5 tsp salt Sea salt if you’re fancy.
  • 3 large eggs Check the date before using.
Decorating Ingredients
  • 1 batch white frosting Store-bought.
  • a few drops pink food coloring For the classic Hello Kitty color.
  • 1 black edible marker For drawing Hello Kitty's face.
  • as needed graduation-themed decorations Including mini caps.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, sugar, baking powder, and salt. Whisk together.
  3. In a separate bowl, beat the softened butter until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Alternate adding the milk and dry mixture until smooth.
Baking
  1. Pour the batter into two greased round cake pans.
  2. Bake for about 30 minutes, or until a toothpick comes out clean.
  3. Let the cakes cool in the pans for about 10 minutes, then flip onto wire racks.
Frosting and Decorating
  1. Once cooled, layer white frosting between the cakes and cover the top and sides.
  2. Mix a few drops of pink food coloring into the frosting and then frost the cake.
  3. Draw Hello Kitty's face using the black edible marker.
  4. Add graduation-themed decorations as desired.

Notes

This cake is best enjoyed with moderate frosting. Using a turntable can aid in frosting application. Cakes don't have to be perfectly pretty to be delicious.
