  • 2 lbs beef chuck, cut into 1-inch cubes Prefer chuck for its juiciness.
  • 2 tbsp olive oil Using extra virgin makes it feel gourmet.
  • 1 large onion, chopped Adds a lot of flavor.
  • 3 cloves garlic, minced Key to good cooking.
  • 3 medium carrots, sliced Kid-friendly and adds sweetness.
  • 3 medium potatoes, peeled and diced Soaks up the flavor.
  • 2 cups beef broth Homemade or store-bought.
  • 1 cup red wine A splash for the chef, too.
  • 2 tbsp tomato paste Gives rich color.
  • 1 tsp dried thyme Adds a fancy touch.
  • 1 piece bay leaf Remove before serving.
  • to taste salt and pepper Use sea salt for a special touch.
  • 2 tbsp chopped fresh parsley (for garnish) For color and presentation.

Method
 

Cooking Instructions
  1. In a large pot over medium-high heat, heat the olive oil for about a minute.
  2. Add the beef cubes and brown them on all sides.
  3. Once browned, remove the beef and set it aside.
  4. Add the chopped onion to the pot and cook for about 5 minutes, until softened.
  5. Stir in the minced garlic and sauté for 1 more minute.
  6. Return the browned beef to the pot, then add the carrots, potatoes, beef broth, red wine, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
  7. Bring the pot to a boil, then lower the heat and cover. Let simmer for at least 2 hours.
  8. After 2 hours, check that the beef is tender and the vegetables are cooked. Remove the bay leaf, taste, and adjust seasonings.
  9. Serve hot, garnished with chopped fresh parsley.

Notes

Use a large pot to prevent overflow. A sturdy wooden spoon is recommended. Pair with crusty bread for the ultimate cozy experience. Letting the stew sit overnight enhances flavors.
