- In a large pot over medium-high heat, heat the olive oil for about a minute.
- Add the beef cubes and brown them on all sides.
- Once browned, remove the beef and set it aside.
- Add the chopped onion to the pot and cook for about 5 minutes, until softened.
- Stir in the minced garlic and sauté for 1 more minute.
- Return the browned beef to the pot, then add the carrots, potatoes, beef broth, red wine, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
- Bring the pot to a boil, then lower the heat and cover. Let simmer for at least 2 hours.
- After 2 hours, check that the beef is tender and the vegetables are cooked. Remove the bay leaf, taste, and adjust seasonings.
- Serve hot, garnished with chopped fresh parsley.
Notes
Use a large pot to prevent overflow. A sturdy wooden spoon is recommended. Pair with crusty bread for the ultimate cozy experience. Letting the stew sit overnight enhances flavors.
