- Clean the nectarines and dice them into 1/2-inch pieces.
- In a large bowl, whisk together the oat flour, baking powder, salt, and coconut sugar.
- Pour in the vanilla extract and almond milk, stirring until just combined.
Baking
- Pour the batter into the prepared pie dish and layer the diced nectarines on top.
- Bake for about 1 hour, checking around the 50-minute mark.
- Allow the cobbler to cool for about 30 minutes before serving.
Notes
Consider serving with vegan vanilla ice cream or coconut whipped cream. This cobbler is also great for breakfast.
