Filling
  • 2 cups nectarines (about 3-4 large ones)
Cobbler Mixture
  • 1/2 tbsp coconut oil For greasing the pan
  • 1 cup oat flour Can be made at home by blending rolled oats
  • 2 tsp baking powder Essential for texture
  • 1/4 tsp salt Sea salt preferred
  • 3/4 cup coconut sugar Less sweet than regular sugar
  • 1 tsp vanilla extract Use pure vanilla
  • 3/4 cup almond milk

Method
 

Preparation
  1. Preheat your oven to 325°F.
  2. Grease a 10-inch pie pan with coconut oil.
  3. Clean the nectarines and dice them into 1/2-inch pieces.
  4. In a large bowl, whisk together the oat flour, baking powder, salt, and coconut sugar.
  5. Pour in the vanilla extract and almond milk, stirring until just combined.
Baking
  1. Pour the batter into the prepared pie dish and layer the diced nectarines on top.
  2. Bake for about 1 hour, checking around the 50-minute mark.
  3. Allow the cobbler to cool for about 30 minutes before serving.

Notes

Consider serving with vegan vanilla ice cream or coconut whipped cream. This cobbler is also great for breakfast.
