Ingredients
  

For the dough
  • 1 cup almond flour A great gluten-free option!
  • 1/4 cup coconut flour The secret to that lovely texture
  • 1/4 cup sweetener Can use coconut sugar or granulated erythritol
  • 1 tsp cinnamon Adds a nice flavor
  • 1/2 tsp baking powder Just enough to fluff things up
  • 1/4 tsp salt Sea salt if you’re fancy
  • 1/4 cup unsweetened applesauce Keeps the bites moist
  • 1 large egg Makes everything better
  • 2 tbsp melted coconut oil A healthy fat for flavor
  • 1 spray cooking spray To prevent sticking

Method
 

Preparation
  1. In a bowl, combine the almond flour, coconut flour, sweetener, cinnamon, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the applesauce, egg, and melted coconut oil until blended.
  3. Pour the wet ingredients into the dry mixture and mix until a sticky dough forms. Adjust with water if too dry.
  4. Preheat your air fryer to 375°F (190°C).
  5. Shape the dough into bite-sized pieces or little logs.
Cooking
  1. Spray the air fryer basket with cooking spray and arrange churro bites in a single layer.
  2. Air fry the bites for about 8-10 minutes until golden brown and firm.
  3. While cooking, mix additional cinnamon and sweetener in a bowl for coating.
  4. Toss churro bites in the cinnamon-sweetener mix while they’re still warm and serve.

Notes

Add more almond flour or applesauce for consistency if needed. Watch the air fryer closely as cooking times can vary.
