  • 1 tablespoon turmeric The golden spice that adds magical flavor.
  • 1 piece lemon (juiced) Squeeze well; zest is optional but recommended.
  • 1 piece onion (chopped) Chop with care as it may bring tears.
  • 2 cloves garlic (minced) Garlic enhances the flavor of the soup.
  • 4 cups vegetable broth Homemade or store-bought works.
  • 1 teaspoon salt Sea salt for fancy, regular for the everyday.
  • 1 teaspoon black pepper Adds a nice kick.
  • to taste fresh herbs (like parsley or cilantro) Use whatever is available.
  • to taste olive oil (for cooking) Extra virgin for a touch of elegance.

Method
 

Preparation
  1. In a pot, heat olive oil over medium heat for about 1-2 minutes.
  2. Add the chopped onion and minced garlic to the pot and sauté until fragrant.
Cooking
  1. Add the lentils, turmeric, salt, and black pepper to the pot. Stir well.
  2. Pour in the vegetable broth and bring the mixture to a boil.
  3. Reduce heat and let it simmer for about 30-40 minutes, or until lentils are tender.
  4. If it gets too thick during cooking, add a splash of water.
Finishing Touches
  1. Stir in the lemon juice and fresh herbs before serving.
  2. Adjust the seasoning according to your taste.

Notes

This soup is wonderful with crusty bread or a light salad. Add a dollop of yogurt for extra creaminess.
