Ingredients
  

For the chicken skewers
  • 2 lbs boneless, skinless chicken breasts or thighs (cut into bite-sized cubes) Thighs are juicier but breasts can be used as well.
  • 3 tbsp olive oil Regular olive oil works well.
  • 4 cloves garlic, minced Feel free to add more if you love garlic.
  • 1 tsp dried oregano
  • 1 tsp smoked paprika Adds great flavor without too much spice.
  • 1/2 tsp chili flakes (optional) Skip if making for kids or those who dislike spice.
  • 1 cup grated Parmesan cheese Fresh is great, but pre-grated works in a pinch.
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste zucchini, cherry tomatoes, mushrooms, bell peppers (optional for skewers) Use up any forgotten veggies in your refrigerator.
  • as needed Wooden or metal skewers Soak wooden skewers in water for 20 minutes.
  • for garnish Fresh parsley Adds a nice touch to the presentation.
  • for serving Lemon wedges Delicious with a squeeze of lemon.

Method
 

Preparation
  1. Cut chicken into bite-sized pieces for even cooking.
  2. Soak wooden skewers in water for 20 minutes, if using.
  3. In a large bowl, mix olive oil, garlic, oregano, paprika, chili flakes, salt, and pepper.
  4. Add chicken to the bowl, toss to coat, and marinate for at least 30 minutes.
  5. In another bowl, mix Parmesan cheese, garlic powder, and onion powder.
  6. Thread the marinated chicken onto skewers, alternating with any optional veggies.
Cooking
  1. Roll the skewers in the Parmesan mixture to coat evenly.
  2. Preheat the grill to medium-high.
  3. Cook skewers for 10–12 minutes, turning occasionally, until chicken reaches 165°F.
Serving
  1. Garnish skewers with parsley and serve with lemon wedges.
  2. Drizzle some extra olive oil on top if desired.

Notes

For best results, marinate the chicken for at least 30 minutes to enhance flavor. Use a non-stick grilling basket to prevent skewers from falling through the grill.
