Preparation
- Cut chicken into bite-sized pieces for even cooking.
- Soak wooden skewers in water for 20 minutes, if using.
- In a large bowl, mix olive oil, garlic, oregano, paprika, chili flakes, salt, and pepper.
- Add chicken to the bowl, toss to coat, and marinate for at least 30 minutes.
- In another bowl, mix Parmesan cheese, garlic powder, and onion powder.
- Thread the marinated chicken onto skewers, alternating with any optional veggies.
Cooking
- Roll the skewers in the Parmesan mixture to coat evenly.
- Preheat the grill to medium-high.
- Cook skewers for 10–12 minutes, turning occasionally, until chicken reaches 165°F.
Serving
- Garnish skewers with parsley and serve with lemon wedges.
- Drizzle some extra olive oil on top if desired.
Notes
For best results, marinate the chicken for at least 30 minutes to enhance flavor. Use a non-stick grilling basket to prevent skewers from falling through the grill.
