  • 1.5 pounds ground chicken Ground turkey can be used but chicken is recommended for juiciness.
  • 3/4 cup grated Parmesan cheese Use high-quality Parmesan for the best flavor.
  • 1 cup breadcrumbs Plain breadcrumbs are preferred over seasoned ones.
  • 2 large eggs Make sure they are not cracked.
  • 4 cloves garlic, minced Garlic adds a lot of flavor.
  • 1/2 cup milk Any type of milk can be used.
  • 1/4 cup chopped fresh parsley For garnish and additional flavor.
  • 1 teaspoon salt Sea salt recommended.
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil Use extra virgin olive oil for better taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a loaf pan with olive oil.
  3. In a large bowl, combine the ground chicken, grated Parmesan, breadcrumbs, eggs, minced garlic, milk, chopped parsley, salt, and black pepper.
  4. Mix until just combined; do not overmix.
  5. Transfer the mixture into the prepared loaf pan and shape into a loaf.
  6. Brush the top with olive oil.
Baking
  1. Bake for 45 minutes, or until the meatloaf is cooked through and hits an internal temperature of 165°F (74°C).
  2. Let the meatloaf rest for 10 minutes before slicing.
  3. Garnish with extra parsley and serve warm.

Notes

Kitchen tools: A good mixing bowl makes it easier to mix the ingredients. This dish pairs well with mashed potatoes or a fresh salad.
